Mirror Apple Watch on iPhone

I was always under the impression my Apple Watch 5 wasn’t able to mirror to my phone but on the latest update there is now a display on the watch to mirror a workout on to the phone but I’m still at a loss on how to do it as “ mirror Apple Watch” is not an option in my notifications Any advice would be greatly appreciated
