Excellent Pizza recipes

    I tried this over the Xmas. From Jamie Oliver. Very easy and tastes gorgous.

    Pizza base:
    30 grams of fresh yeast.
    30 grams of honey or sugar
    Just over 1 pint (625 milliliters) tepid water
    Just over 2 pounds (1 kilogram) strong bread flour
    1-ounce (30 grams) salt
    Extra flour, for dusting

    Stage 1:
    Dissolve the yeast and honey (or sugar) in half the tepid water.

    Stage 2:
    On a clean surface or in a large bowl, make a pile of the flour and salt. Make a well in the center and pour in all the dissolved yeast mixture. With 4 fingers of 1 hand, make circular movements from the center moving outwards, slowly bringing in more and more of the flour until all of the yeast mixture is soaked up. Then pour the other half of the tepid water into the center and gradually incorporate all the flour to make moist dough. (Certain flours may need a little more water, so don't be afraid to adjust the quantities.)

    Stage 3:
    Kneading! This is the best bit, just rolling, pushing, and folding the dough over and over for 5 minutes. This develops the gluten and the structure of the dough. If any of the dough sticks to your hands, just rub them together with a little extra flour.

    Stage 4:
    Roll the dough into a big sausage and cut into 10 (or 5 if you want big pizza's). Roll out each of the dough segments into a roundish shape.

    Stage 5:
    Cut out tin foil to take each of the bases. Cover with a little olive oil and brush then place your base on top. Do this for each of the pizza bases. You can then freeze some if you want :)

    Stage 6:
    You can either make your tomato base (which I did - bit of work but it's worth it) as per Jamies episode. To do this you need a load of tomatoes - cut around the core and discard (the core). Take off all the seeds. Cut up and put them in a bowl - VERY IMPORTANT put them all in some kitchen paper and squeeze all the juice out - this will stop the pizza getting soggy. Add a table spoon of olive oil, a clove of garlic (cut up) and some origano. Mix it up with a teaspoon then spread over the pizza.

    Than just add your toppings and pop in the oven on highest setting for about 6 mins. Tastes gorgous.
