Delta fly daily from Shannon/Dublin via Atlanta.
Some days flight direct from Shannon other days
    via Dublin.
From about may there will be non-stop charter flights
from Shannon/Dublin to Orlando. Ask travel agent
    about those.
Best fare with www.delta.com is about €549.

Get the direct flight - otherwise you'll have to spend 3/4 hours in Atlanta Airport - not a pleasant experience.

Is there usually a good time to travel (Price wise) Other then X-mass ? Or are prices usually around the 400 mark ?

We are heading to Orlando in 2 weeks (\o/). We booked with http://www.touramerica.ie/ as they were the cheapest for flights. We are flying Dublin - London - Miami. We did the same trip last January and it was fine.
