Not overly familiar with mobiles;why unlock?

Can somebody please explain why you would want to unlock your mobile? I assume it's so that you can use any SIM card in it but would you not be stuck with a contract from the original supplier? Are there any other reasons for unlocking e.g. does it unlock the restrictions put on the phones by the operators?

The main reason is to use a sim from another network in the phone. Handy if you got a cheap pay as you go phone and want to use it on a bill pay from another network.
