Turkey Schnitzel

    Just got landed with a massive turkey (long story) so to use some of it up I made this up for lunch, and it was pretty good! This is for two people, double up if it is for 4, etc.

    2 turkey breast steaks, each about 3/4 inch thick.
    Some chopped fresh herbs or 1 tsp of dried mixed herbs.
    1 egg
    1 heaped tablespoon of flour
    2 ounces of breadcrumbs
    Salt and pepper
    Oil for frying

    Wrap the turkey steaks in cling film, and pound the meat on both sides to flatten until its about 1/2" thick. (I used a rolling pin to pound them, but anything heavy should do).

    Remove from the cling film and season on both sides with some salt and pepper.

    Put the flour on a flat plate, then beat the egg in a shallow bowl, and then place the breadcrumbs (mixed with some salt, pepper and herbs) on another plate. Line them up in the following order: flour, egg, breadcrumbs

    Heat the oil in a heavy pan.

    Dip the slices of turkey into the flour (making sure it is evenly coated), then into the beaten egg and then the breadcrumbs.

    Pat gently and ensure that both sides of the slices are evenly covered with crumbs.

    Fry the schnitzels for about 3 to 4 minutes on each side at a medium-high heat until meat is cooked and crumb coating is golden brown and crisp.

    Serve warm with mashed potatoes or accompaniment of choice. If you were serving it up in a more formal setting, you could garnish each schnitzel with a slice of lemon before serving.
