Windsor Nissan in Galway are the best I have found - I am sure they rent in Dublin too. You can use your own insurance or theirs and they have Kubistar, Primastar and Interstar vans for whatever size you need.

Prestige van rental in Palmerstown Dublin were the cheapest I could find about
2 yrs ago.

They have Hiace and Transit size vans.
