Cooking with nettles

    What time of year can nettles be harvested for cooking? I read somewhere that it is too late now as the acid they produce can cause stomach upsets.

    I always heard when I was young that after St Patrick's Day the Púca pissed on them. So presumably before then.

    But if you harvest just the young tops it's normally nice enough. Saute with onions and then add chicken stock and a little grind of nutmeg for a nice soup.

    I've also heard that you can use the young leaves in a salad ... apparently they don't develop their sting until later. Never tried it though.
