Presuming the tyres are stock (Specialized Mondo Pro, 700x23C, aramid bead, 120TPI) you want the 700 x 18 - 23 Presta. (Your tyres are 23C and these tubes will fit anything from 18-23C.)

EDIT: The tyre width should be written on the side of the tyre BTW, but one way or the other you almost certainly have 23C. Nice bike.
