    Have lots of leeks at the mo. I forget how to prepare the damnt hings. can they be boiled? what kind of dishes could i prepare to use them up?

    Leeks are fab sauteed in a little butter with plenty of freshly ground black pepper.

    My favourite is when they are served with boiled rice and 4-5 slices of grilled bacon shredded and mixed up together....... ok you are after making me hungry now.

    Potato and leek soup is also an option.

    Chicken and leek pie, topped with mashed potatoes

    You'll be able to freeze it too - so you have a stock for those cold winter days.

    Wrap them in parma ham and then bake them and finish this with hollandaise sauce and serve with boiled potatoes.
    Lovely stuff.
    I use them in all sorts, where onions would generally also be used.

    Use them in soups and stews - I'm sure Delia does a great potato and leek mash with a cheese crust, lemme find the recipe...

    Right, the recipe I was thinking of was shepherds pie with cheese-crusted leeks, and I've tried the cheese crusted leeks bit before, sans rest of pie, and it was gooood...

    I absolutely adore leeks simmered in white wine or Nolly Prat and seasoned with cardomin and black pepper served with carrot and parsnip mash and some white fish. Now that is classy comfort food.
