Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    Pork chops and mash covered in gravy,was a huge feed.

    Salmon and cod, fish pie style, but with crispy sliced potatoes on top instead of mash to give a texture contrast. Twere nice too!

    chicken fillets, root veg and baby potatoes roasted in chopped Garlic, soy sauce, and olive oil, simple yet so tasty.

    Went mad last night and got a big fry up! Tullamore Sausages, Tullamore Pudding (White & Black), Galtee Tender Cure Rashers, Birds Eye Waffles (they're waffly versatile) a fried egg, small bit of heinz beans, and a big cup of tea. Delicious!

    Tonight we're having Chinese

    homemade lor mai kai to start.

    For main I have a rolled, boned leg of free range pork that I was at a bit of a loss as to what to do with - all the skin is gone so roasting it doesn't appeal and I think it's too lean for long slow cooking.
    So I'm doing it as a kind of fast pot roast in a terra cotta casserole.
    I've coated it in my own Chinese spice mix and brown sugar and have put lots of garlic, ginger and chilli in too and pored soy over it. I'm going to do it in a hot oven for about 1h30m then let it rest in the pot for 30 mins.
    The hope is that it will be cooked through but not dry!

    With that will be some roast eddoes (first time trying to roast these guys), steamed kai lan and fried noodles.

    All a bit experimental but I am hopeful:D

    lor mai kai was yumm - made that before.

    The pork was just done - a trace of pink in the very centre. Probably could have let it rest a little longer for more tenderness but it wasn't dry and the spicy jus from it was gorgeous with the fried fine rice noodles.

    The roast eddoes were remarkably similar to roast potatoes.

    Pretty pleased overall:D

    Tonight is roast chicken with mashed potato, bread stuffing, broccoli, peas, carrots and gravy, made by himself's fair hands. It's only two of us, so the remaining chicken will be brought for lunch tomorrow and the carcass will be utilised to make soup.

    Havnt been the best healthwise recently and resulting low appetite has not helped. However on return of same this weekend I went roast mad!

    Saturday was slow roast chicken at a low temp from Heston B recipie. I was a bit hesitant but it worked well and maintained its moistness. Served with roast spuds and boiled broccoli.

    Yesterday was a roast striploin joint which was very good indeed!

    Gnocchi bake with blue cheese, creme fraiche, parmesan and spinach. Ridiculously full of calories but ridiculously filling and satisfying! :p

    I had gnocchi too! But just in a lovely slow cooked tomato sauce with loads of parmesan.

    Low fat spinach & ricotta tortellini with bacon, peas, basil pesto & parmesan. Delicious, and a little goes such a long way. Very satisfying.

    Crab linguine with tomato and spinach. Loving crab at the moment. I bought a large live brown crab at the weekend. Cooked in 15 minutes, the quantity of meat from it was huge, would have made linguine for 4 easily. (Two of us ate it as baked crab :D). The two smaller crabs I bought today were good, but the smaller crabs are a lot more fiddly to dress.

    Tonight I made chicken breasts stuffed with Philadelphia and some fresh herbs, and wrapped the chicken in some pancetta. Had it with some new potatoes and steamed veg. Yum.

    Odd mixtures of dishes tonight. I had a pair of Arbroath Smokies in the fridge, so made a Cullen Skink. Soup was good but Mrs Minder wasn't a huge fan, so we also had some roast chicken thighs with lemon and thyme, and a quinoa salad with fresh herbs, hazelnuts & pumpkin seeds, chilli, lemon juice and crumbled goats cheese.

    Aw so hungry reading these. That crab linguini sounds fantastic! Was just mashed spuds and stew today,was nice though.

    Smoked haddock mornay with potato parmentier and what was supposed to be a celeriac and fennel brandade, more like a puree but it still delivered a great flavour.

    No, I don't live in Ireland so I can't really keep up with either of them.

    Friday night was pork chops in an onion, creme fraiche and cider sauce. Served with baby spuds and wilted spinach. Very good indeed. Got the Pork recipe from the BBC Good Food site (www.bbcgoodfood.com)

    The meal didnt start too well however. I had been looking for fresh prawns in my local Superquinn but none to be had. I decided for simplicity (and I guess lazyness) to buy some of their ready made prawn cocktail. May I was unlucky but bad, bad idea. Tons of vile sauce with very limp prawn. I would not recommended it!

    I had the same today and yesterday but it was just as good both days :) Had some crab claws quickly pan fried in garlic oil, tian of crab, some poached salmon on a big pile of lovely salad and cherry tomatoes with balsamic dressing, yum.

    Threw a BBQ at the weekend - used a JOliver idea and pruned long shoots off my rosemary bushes, stripped the leaves and used the stalks as skewers. Works quite nicely.

    Also made coleslaw and Greek salad, dips, cut veg for dips, crushed kipfler spuds with butter, salt and parsley, sodabread loaf, burgers, so on.
