Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    Had a chicken fillet in the fridge and didn't know what to do with it.

    Quick search here, and then cooked this.

    Really enjoyed it.

    Ultimate comfort food - buttermilk fried chicken with spicy mac & cheese

    I've just started culinary arts in DIT and as part of our orientation we went to the pigs ear for lunch today.

    I had:
    Pork and ham hock brawn with carrot jam, pickles and toast.

    Slow cooked duck leg with roast potatoes, sweetcorn and some sort of bean I forget what.

    Warm 70% chocolate tart with caramel and salted butter ice cream.

    It was all amazing. One of the best meals I've had out in a long time!

    Courgette linguini with chili, tomatoes & basil. Very tasty - and low carb!

    Did I time this right or what? Today I made a coddle. With a twist.
    To the spuds, sausages, onions, carrots, bacon and stock I added 2 cooking apples that were to hand. Lovely and the dubs won. It worked. It will feed an army so I'll have another bowl later :D

    Last night we had chicken salad.
    I had previously grilled chicken thighs, taken the meat off the bone and chopped into chunks. I fried this up to serve on a bed of grated carrot (with ginger, sesame oil, wasabi and lemon juice) which was on top of mixed, dressed leaves, cherry tomatoes and cucumber.

    I tend to copy the picture URL straight from my blog so the picture isn't giant so they end up with the stamp on them...

    Buffalo Wings. Only €2.50 for chicken wings in Tesco (about double the amount shown). Cook, add Franks, celery stick. Easy!

    Five-spiced pork chops with miso udon and veg.

    Happy with it for a first attempt at making itr up out of my head. Next time; more 5 spice, less miso paste.

    I had Honey-ec's Cannelloni last night.

    I loved the filling and the tomato sauce ( I changed very little;)) but I was not very happy with the yoghurt based white sauce. (I should point out that I used Greek style yoghurt rather than fat free natural yoghurt) I had reservations about the sauce but went with it anyway - I really should follow my instinct.

    I'll be using that recipe again but with bechamel sauce on top:D
