Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

The 'Here's what I had for dinner last night' thread - Part I

    Serves 2

    350g penne pasta
    200ml cream
    1 tbsp chopped flat leaf parsley
    4 tbsp vodka
    3 tbsp tomato puree
    35g butter
    salt and pepper


    Cook pasta as normal
    Melt butter in pan. Add tomato puree and parsley and season.*
    Mix together on low heat for five minutes.
    Add cream then add your vodka, simmer on a low heat for 5 mins until the alcohol has burned off and thickened.
    Drain pasta and stir into your sauce.

    Enjoy!

    *you could add cooked ham when the parsley and tomato puree is added. I tend not to most of the time though.

    Tonight was lamb chops with basil oil, garlic fondant potatoes, cabbage and leeks in white sauce and some roasted tomatoes. The white sauce came out a little thicker than I wanted, but still yummy.

    What you might call (if you were trying too hard) a deconstructed monkfish Thai green curry with fragrant rice and sugarsnap peas.
    There was lots more sauce for pouring than what was in the pic:D
    Sauce was from a curry I did a couple of weeks back.

    Last night I had steak with stir fried veggies and home made wedges, another quick and simple dinner.

    Tonight it was meat loaf, mash potatoes, gravy and veg. I overdid the meat loaf a bit so it ended up being a bit dry, so I just added more gravy to it. I'll definitely make it again and cook it slightly less, I think the problem was that I probed it to see if it was done twice, and I think that was when the juices escaped. Ah well, you live and learn.

    Cooked steak, boiled baby potatoes, peas and fried mushrooms and onions with pepper sauce for me and two friends...tasty!

    Took advantage of the Woolshed's €10 steak night last night, bf had sirloin and I had kangaroo. Delicious big steaks, chips and garlic butter, great value. Only complaint was that they were slightly more medium than rare in parts, but still delicious.

    Properly cooked (very hot oven and single layer of chips) they can be alright.
    They have improved over the years.

    I think the ones featured in the pic are the mccains in beef dripping ones which are lovely (for oven chips) if you cook em so the grease all dries out and they crispen up.

    Tonight I had Spicey Ribs and corn on the cob, delish!

    Chicken legs roast with lemon thyme; potato, apple and chorizo bake, roast tomatoes with apple balsamic, asparagus (I'm normally good for not buying out of season veg that has travelled half way around the world but today I just really wanted asparagus:o); chickeny, thymey, winey jus.

    Great looking food all round on this thread recently!

    The other night we had a tapas feast.

    There was griddled broccolli with balsamic dressing, mashed chickpeas with oregano and garlic, fried chorizo (not pictured), crispy squid, patatas bravas and some manchego cheese with honey & thyme.
