Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    Tonight I made Piri Piri chicken served with a sweet potato, feta and chili mash. Very happy with how it turned out

    One of Jamies 30 minute meals? I love making the the mash from that recipe it is so tasty!

    Yup, thats the one. The mash was gorgeous, and so simple to prepare! Will definitely make it again.

    Roast leg of lamb sandwich with cumin yoghurt and home made wedges. It was more of a lunch but at dinner time, didn't have much time before I had to go back to work.

    Got some nice, fresh crab meat in the Good Fish place in Bishopstown in Cork on Sat after reading this in the IT (Domini Kemp). It was delish...esp the fried break-crumbs.

    Spaghetti with crab and mint

    Serves 4
    350g spaghetti
    350g cooked crab meat
    125ml olive oil
    50g breadcrumbs
    2 cloves garlic peeled and crushed
    2 pinches chilli flakes
    Zest and juice of 2 lemons
    Salt and pepper
    Bunch mint, roughly chopped
    Handful of watercress or rocket
    This is a very quick dinner to make: in a frying pan, fry the breadcrumbs with about one-third of the olive oil and the garlic and chilli as well as the lemon zest. Season well. Shake them about in the pan and let them brown slightly. Cook the pasta in plenty of boiling water, then drain it, stir in the last two-thirds of the olive oil and add the crab meat, mint, lemon juice. Season and then pile into bowls and top with the breadcrumbs and watercress or rocket.

    Got nice fillet steaks from Aldi served with caramelized onions, whole-grain mustard, salad, vine tomatoes, and home made tomato & basil relish.
    The steak sandwich was nice, but the pictures didn't turn out great :o

    No pics but last night had slow roast (about 5 hours) pork shoulder rubbed with salt, pepper, allspice, corriander seed, cumin seed, thyme; roast carrots, parsnips, beetroot, shallots, garlic (with same spices); potato and sweet potato mash; gravy from the copious juice from the pork, dry sherry, stewed apple and sliced ginger.

    All very nice but I was a little shy with the spices.

    Fillet Steak with a Leann Follain sauce (from a stew I'm making for tomorrow) with baby potatoes and peas. I'm making the best of tesco's 5 for €10 deal on O'Haras beers, they're featuring in pretty much every meal I'm having this week.

    Still have 5 bean burgers from last night - that'll be 2 for the OH and 3 for myself. Made a potato and beetroot salad to go with it. Dressing made from fresh goats cheese, greek yoghurt, chives, mint, a sprinkle of garam massala,salt, stem ginger and sliced onion.

    Bacon, egg, sausage, beans and chips. Was lovely. The OH was away and i'm on a bit of a diet so I had it in comfort. Told her I had the chicken salad that she left for me. The dog got the chicken and the salad went in the bin. Lovely grubly.

    Didn't feel like cooking tonight so OH went to the kebab shop for a Kofta kebab, each. Loads of veggies and lamb kofta.

    Tonight's dinner was home made pastrami. Brisket of beef brined for 6 days in a salt, sugar and spice brine; then marinated in a dry spice rub of paprika, cumin and oregano for 24 hours. Vacuum packed and cooked sous vide for 48 hours at 57.5c, I dried it and blitzed it on a scorching hot bbq to get a sizzle on it and add to the smokey flavour. We ate it in sourdough sandwiches with dill pickles and sliced tomato.

    Put a moroccan lamb shank casserole in the oven, and then realised I had a bowl of chicken stock in the fridge plus two cooked chicken legs. Stripped the meat off the legs and made a chicken and leek risotto with lemon zest, parmesan and chopped parsley. Had that for dinner - lamb shank goodness tomorrow. :)

    Striploin steaks (over:mad:)done on the gas BBQ; N. African spiced sauce; couscous with pine nuts, olive oil and fresh coriander; tabouleh; chopped dried apricots.

    Gotta say, I prefer my fish panfried and leeks sauteed in lashings of butter. It was okay-ish, but not WOW. :(

    Since it was such a hot day, decided to a salad with a difference! It's chilli marinated chicken, served with a lettuce, carrot, apple and egg salad. :) Looks all messy but it's delicious. :)
