Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

Went to the boyfriends for dinner last night, we had fillet steak, mashed potatoes with scallions, butter and milk mixed through them and we had red onions and mushrooms.

It was delicious, no pics though unfortunately.

Smoked a pork shoulder on Sunday - it took 10 hours. 10 exhausting, smoke-filled, temperature obsessed and starving hours.

It was worth it though. This is the result -

    picture.php?albumid=1769&pictureid=13256

which when pulled apart looked like this -

    picture.php?albumid=1769&pictureid=13257

Had some lovely pulled pork sambos with homemade BBQ sauce and coleslaw. Have plans for pulled pork burritos and pulled pork chilli too!

Pizza and potatoes?!! Only in Ireland :p:D

Haha I needed a little something on the side! Wouldn't be much into salads so a few pesto potatoes were lovely :p

That's the one Hill Billy, thanks!

Seeing my fever has vanished, my achy bones not achy anymore, can't stand the sight of the Jewish penicillin any longer and my appetite never left me (usually never does ;)), I have a big pot of Ragu Bolognese on the hob.
Served with tagliatelle. And it'll be very very tasty, indeed. :)

Right. Here it is. It looks a bit bleak, but tasted heavenly.

Lamb and veg curry from scratch. Tried to make the naan myself, but completely messed it up, so went with the pop in the toaster option.

I never looked on pizza as a main meal at all. Rather as something you'd be nibbling on while waiting on the dinner to cook.

First post on this thread, been stalking it for a lil while!! All of the food looks YUM!!!

Dinner tonight was roast rib of beef, medium rare served with a warm salad of bulgar wheat with roasted veg (b-nut squash, yellow pepper, red onion, garlic and tomato) brocolli and toasted pumpkin seeds with a balsamic vinagrette mixed in to the warm bulgar wheat befor the beg was added so it soaked in a little!! It was really good with the beef and iv enough left over to take 4 my lunch tomorrow :)
    Wil progress to pics eventually!!!

    Sure,

For 2 to 3 people you need:

    1lb of diced lamb
    1 diced red onion
    1 tomato
    2 tbsp of tomato puree
    a handful of frozen peas
    1 inch of root ginger
    2 cloves of garlic
    1 green chilli
1 lemon (seperate into zest and juice)
1 tbsp of tumeric, garam masala, chilli powder, and cumin
    handful of chopped fresh corriander
    mint leaves
    Olive oil
    Salt & Pepper

Put the garlic, chilli, and tomato into a food processor and blend into a paste.

Fry the onion in a saucepan in olive oil on medium heat.

Brown the lamb in a separate frying/griddle pan and olive oil.

Add the paste to the onions when they become translucent.

After about 5 mins add the spices.

Then add your browned lamb. You may want to add some water if it has become too thick.

Reduce heat to low and simmer with a lid on for about 20mins

Turn the heat up to high. Throw in the frozen peas, and lemon juice. After about 2 or 3 mins of cooking on high, throw in the lemon zest and chopped corriander.

    Take it off the heat.

    Garnish with a mint leaf.

Its not from any particular recipe and the quantities I use are estimates, so you can adjust as you see fit.

If anyone has a good recipe for naan bread, let me know, as I have never succeded in cooking that myself.

Thanks a million, I'll be making that within the next few weeks.

For dinner tonight I hate bacon ribs and potatoes, simple, but delicious.

Free range pork chops done a little pink on the gas BBQ; new potatoes; grilled tomatoes; rocket, herb and Brazil nut pesto; mixed leaves.
(rocket, lettuce, mustard leaves, garlic and all the herbs from the garden:D)

Chilli con carne in wraps for the last two days. A couple of big tablespoons of adobo sauce to flavour the chilli with smokey chipotle and ancho peppers. I use an aji amarillo chilli powder for more heat and fruity flavour. Guacamole, salsa with mango, sour cream, hot sauces, grated manchego, salad leaves and soft white tortillas. Heaven.
