Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    Back to low carb mode after stuffing my face with all kinds of carb laden edible stuff over the last month.

    Last night I sauteed some chopped garlic in olive oil and dissolved a whole tin of anchovies :D before adding spinach. Seasoned with some black pepper (ok loads), nutmeg and a sprinkle of salt. Served with panfried salmon and homemade Béarnaise. Oh, delicious.

    Made Fajitas from scratch. Well, not the wraps, or the sour cream, but not a packet of taco seasoning in sight! Were pretty tasty but could have done with more spice. Will do better next time.

    Made a pie (of sorts) last night. Smoked haddock, leek, potato and spinach with a puff pastry casing. Kept the sauce to a minimum.
    It was lovely, I'll be making it again!

    Got the idea from a ham pie I seen Nigel Slater making recently.

    Had some family over for dinner in my mum's last night (last of the relatives visiting for Christmas) and she threw together a quick and gorgeous dinner. Had garlic bread and mini burgers for starter, fish pie with garlic potatoes for main and Amarula (sp?) cheesecake with passionfruit ice cream for dessert. We actually had a raspberry and white chocolate cake too but it was demolished before I got a photo :)

    Made homemade pizza for dinner tonight. Made the dough in the bread maker, made the sauce from scratch and topped it with pepperoni mozzerella and when it was cooked some rocket leaves. Served it with butternut squash chips and homemade garlic dip....OH said it was the nicest pizza he ever had!!

    Last night I'd a lovely Pan fried free range chicken breast with sauteed baby spuds and beetroot served in a "sticky" soy and honey based sauce in Eat @ Massimo in Galway, was really yummy. Extremely filling and moreish.

    The day before I had a fantastic Lamb Tagine with fresh pita from The High Cafe in Galway, lovely little place that does really nice Moroccan food at an extremely reasonable price.

    Last night's dinner.
    Pan griddled veal chop (succulent), mashed cauliflower with a smidgin of roquefort cheese (yum) and sauteed sliced onion, mushrooms (that were feeling miserable in the fridge), lardons, thyme, garlic, grainy mustard.

    Very disappointing though. Chicken was tough, no idea why. Like very, very tough. Even the kids threw it back at me :(
    Don't know why. Put butter mixed with thyme & parsley under the skin, rested it for half hour, it was free range??
    I cook this at least every fortnight and its delish.
    Maybe I just got a dodgy chicken.

    On Saturday night I made a 3 course meal for the lads and we watched the FA cup. A nice night in after all of the socialising after Christmas!

    Starter- chicken vol au vents (which someone gave me on Friday) and I made a red onion, mushroom and cream sauce to go on top.

    Main- Angus beef Thai red curry with red and green chillis, sweet peppers, red onion, garlic, s&p, coconut milk, cream and natural yoghurt for a little topping. We had this with basmati rice and peshwari naan.

    Dessert- banana bread which I had made earlier in the week, served with vanilla ice cream, peanut butter, flaked almonds and a drizzle of honey.

    Tonight I bought venison burgers with red onion from fallon & Byrne. Served with sweet potato mash and a salad consisting of rocket, grilled sweet peppers and a variety of tomatoes. Simple dressing of rapeseed oil and s&p. haven't had venison in ages and the burgers were delicious!

    went back to The High Cafe today for dinner and had what was simply labled Chicken Couscous. steamed couscous with root veggies, peas and chick peas cooked in a tasty veg broth and marinated poached chicken breast cubes. Simple, hearty and yummy.

    A nice large portion of steak served with a salad of iceberg, grape tomatoes, egg, feta, scallion and a little thousand island dressing with a small slice of crusty bread. It was delicious!

    Gosh some lovely food on here lately....going to have to up my game. Last night had kedgeree...flaked smoked fish, rice, peas, drop of cream, black pepper (for the family). I had just fish and peas (trying desperately to loose weight), may have to stop looking at this thread as a new years resolution. :o

    Just made a homemade pizza (3 cheese, red, white cheddar and mozerella, onion, peppers and pineapple on one side) for the kids in from school, it got milled and i got some very nice comments. Only tried a small piece myself and I have to say it was lovely. My god it makes you realise the rubbish you buy in the shops when you taste the real thing

    Twas all sorts of cold, dark and rainy today so we had shepherd's pie. I had mashed cauliflower instead of potato and it was surprisingly delicious. No photo, got shovelled into gobs too quickly!

    Isn't it just ?! I love mashed cauliflower as potato substitute.


    I got some yellow carrots from a cousin's garden. I diced the (sort of) and sauteed with onion, thyme, bay and seasoning. Had it with quorn fillet.

    Last night i had my girlfriends over for womens little christmas dinner (someone told me this is only a cork thing??)
    Cooked pollock filets with a roasted pepper pesto and sundried tomato crust, sweved it with sweet potato wedges and roasted veggies with wild rocket pesto.
    Dessert was sticky toffe tart ( sticky toffee pudding in a sweet pastry tartlet) served with homemade caramel sauce and vanilla icecream! It was all lush!!

    Dinner tonight was turkey mince bolgenaise with whole wheat spaghetti and parmesan shavings and a bowl of rocket leaves! Very comforting on this horrible night!

    Tonight I made a bacon, mushroom and leek pie with mashed sweet potato topping and some red cheese. Served with French beans. Very quick and easy to make!

    Burrito bowls tonight. Shaped some wraps into bowls and baked them til they hardened, then filled with mixed leaves, spiced up mince and veggies, refried beans, sriracha, salsa and a little grated cheese. So good.

    Sausage Gnocchi from Jamie Oliver's 15 Minute Meals. The gnocchi and sausage were lovely together but I think I'll make my own tomato sauce the next time I have it (and maybe cook it for longer than 15 minutes).

    Preparation
    I grilled a pack and a half of smoked rashers (approx 9 rashers) and peeled and chopped 3 sweet potatoes putting them on to boil.

    Pie filling
    I chopped half a large onion, half a punnet of button mushrooms (into quarters) and roughly chopped one leek.

    I sweated all of this together in a hot pan with a tablespoon of rapeseed oil and a knob of butter for about 5-10 minutes until soft.

    I added in a tablespoon of plain flour and stirred for one minute then gradually added 250ml of milk making sure to keep stirring.

    For the seasoning of the sauce I added cracked pepper and a teaspoon of mustard, (no salt as it will come from the bacon). I also added in a small sprinkle of parmesean :)

    Once the bacon was cooked I roughly chopped into squares and added to the sauce making sure to stir and evenly coat everything.

    I transferred this to a pie/lasgane dish then ready for the topping.

    Topping
    I mashed the sweet potato seasoning with s&p and a knob of butter. I then spread across the filling in the dish.
    Finally I grated some red cheddar on top.

    The dish went into the oven for about 10 minutes (@180c) then I blasted it under the grill for another 5 to get the colour from the cheese.

    You can also put a puff pastry top on the pie but I went with the sweet potato mash! In hindsight I probably could have done with 4 sweet potatoes instead of 3 but I still managed to get an even topping of about 1cm.

    Gammon, potato gratin and carrot crush (hee hee hee Denise out of the royal family calls it carrot crush, I feel alot like them lately a bit too overweight and sits on the couch too much) anyway it was enjoyable, trying to go for moderate portion sizes rather than denying myself everything

    Thanks a million! I actually bought a sweet potato at the weekend as I have never tried it so if I do like it then I will be making this in future :D
