Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back a page or two to re-sync the thread and this will then show latest posts. Thanks, Mike.

    Homemade Beefburgers:

    Round Steak Mince
    Ballymaloe Relish
    Finely Chopped Onion
    Salt and Pepper

    Fresh Lettuce
    White Dubliner Cheese
    Smoked Garlic Mayonnaise
    Seeded Buns

    They were tasty!

    Dunes store does some nice big buns when they are in stock

    Or rather something in the beer - we had nine people around to watch the aussie rules football grand final - we've been at it since midday, it's now 11.30pm and we haven't missed a beat - just moved onto the Australia v. Canada rugby...

    Last night I had whipped potatoes with superquinn sausages and loads of Ballymaloe relish.. mmm. I'l really miss the sausages and relish when I leave ireland. Gotta get as many in as possible while I can!

    A warmed pitta bread stuffed with mayo, baby-leaf spinach, stir fried chicken, peppers, onions and garlic, with homemade potato wedges.

    For lunch I had a baked potato with Kerrygold, sweetcorn, spinach, tomatoes and mayo.

    For breakfast I had a homemade blueberry muffin with a glass of Innocent Superfoods Pomegranate, Blueberry and Acai berry smoothie (it was FOUL but so good for me...)

    I know this thread is only supposed to be dinner, but I had a tasty day...

    Very tasty and very easy to make.

    The other half got me a pizza in Tesco.
    I asked for "a surprise".

    Some "gourmet" pizza company thought it would be a wheeze to make a Bacon and Cabbage pizza for the Irish Market.

    I think I'll pass on it the next time.

    Flour, margarine and water = pastry

    Finely chopped onion
    Cut Rasher's
    Grated cheese
    Two eggs mixed with milk and pepper and poured over the above
    Thinly sliced Finest Tesco White Pudding placed on top

    A very very easy receipe to make and pretty quick too.

    Chinese take-away...although fish finger sandwich sounds tasty, haven't had one in years, I hope there was ketchup on it :)

    Chicken stir-fry with cashew nuts, garlic, mangetout, mushrooms, carrots and peppers with coconut noodles*. Mmmm.....

    *Sounds a bit strange but basically threw the noodles into a saucepan with 1 litre of chicken stock and a tin of coconut milk. It gives the noodles a gorgeous flavour.

    Made a pizza from scratch, then realised I only had enough tomatoes to make sauce to cover half of it so had to wait for the missus to bring me home some more. While I was waiting I left the pizza on a board (which it stuck to) and could not get it off so had to fold it and make a calzone (folded pizza) which ended up being delicious. It was completely accidental and ended up being lovely.
    Had peppers, salami, chorizo, onion and mushrooms.
    Will be making it again.......

    I confess, after a Sunday afternoon in the pub, dinner was Superquinn sausage sandwiches with loads of ketchup and a big mug of tea!

    Saturday - Homemade burgers with mashed spuds & fried tomatoes & scallions in gravy.
    Sunday - An ethnic mish-mash of "Thai green curry"-kind-of chicken soup, the remnants of which were mopped up with a couple of naan breads.

    I was against the clock to get the kiddies fed on Saturday, so used the basic recipe:

    2cm ginger, grated or finely chopped

    Prepare & cook as above. Enjoy!

    Just a question on the ginger, how long would a piece of ginger last in the fridge, do you know?

    I actually think I'll make them on Wednesday.

    Might have them with mashed spuds, scallions, tomatos and gravy too :)

    No idea. I keep my ginger in my veggie basket under the stairs (cool & dark in there). I've kept big lumps of ginger in there for over a month.

    Last night, Mrs Billy had some lovely grilled gigot lamb chops, mash, broccoli & gravy waiting for me. There's nowt like chewing those little bits of lamb off the bone!
