Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    Tonight was lasagne...complete with homemade pasta.

    Unfortunately, I used a touch too much cheese sauce, which made the whole thing a bit messy. Tasty...but messy.

    Last night was my birthday so we had a wonderfully lazy evening and got a Chinese takeaway with about 15 friends. The highlights of the resulting buffet were the salt and chilli prawns, and the Singapore noodles. Dessert was Superquinn's finest Black Forest gateau. All washed down with about 500 bottles of sauvignon blanc. Classy. :)

    Today some of us bleary eyed partiers ventured out to the Dun Laoghaire Farmer's Market in the People's Park. It was absolutely fantastic. Lunch was a delicious Italian sausage in fresh bread with grilled onions and peppers, a Thai corn fritter with chilli sauce, and a cup of hot spiced apple juice with a shot of apple brandy. Fantastic on such a cold, crisp day. I also picked up a big wodge of goat's cheese to use in something delicious this week.

    Dinner tonight was a feast - incredibly tender roast pork with apple sauce and gravy, and all the trimmings, followed by trifle and tiramisu, and quite a lot of a delicious Italian Pinot Grigio.

    Detox needed!

    Just realised, after clicking in to this thread, I didn't have dinner last night. I forgot! My OH is away so I didn't even think about it.

    How bad is that? I just wasn't hungry and didn't think of it :o

    Last night we had baked plaice in breadcrumbs to which I added seasoning and a little garlic and chilli flakes, with green beans and roast baby potatoes.

    Im struggling with weight at the mo so Im trying to be good. Unfortunatley, home is food, work is food and socialising is food. My lardy ass needs to get itself over to the fitness forum pronto :(

    Last night was Govindas, the day before was Govindas and tonight is.......Govindas. I may as well join the Hares! I just dont have th etime to ccok atm and so its easier to eat foods that I know are healthy and weird as it sounds, I dont like to eat red meat when Im flat to the mat.

    Thanks lads. Today my husband came home after his first day back at work/study in 6 weeks (he broke both of his arms just before Christmas, still has one arm in a cast and very limited mobility in the other), feeling very worn out and grumpy, so he got his favourite for dinner, which takes quite some time. Chicken biriyani, with mango chutney, sour cream and naan. And a pint of milk...for calcium! :pac:

    Hmmm.... Singapore noodles, there is something about takeaway singapore noodles that just can't seem to be reproduced at home.

    Last night we had a roast porchetta and a mafaldine pasta with a tomato, anchovy and red wine sauce with pine nuts and raisins.

    Cold breast of roast chicken, quarter of a small wheel of very ripe double cream brie, tablespoon of cranberry sauce, couple of sweet, ripe tomatoes, handful of chick peas with salt and lemon. Odd, but satisfying.

    Chicken enchiladas with spicy rice, rocket, spinach and cucumber salad, corn, sour cream and salsa.

    A starter of brie in filo, served with a redcurrant and chilli jam, served with a baby spinach salad.

    Main was stuffed fillet of pork, baked potato, and mixed veg.

    Desert was apple and redcurrant crumble served with vanilla ice-cream.

    All washed down with a nice bottle of Heida.

    Tonight we had chicken casserole with baked potatoes. Home-made lemon meringue pie for dessert - my first effort, and it was fab.

    I made homemade burgers and after many attempts, I was finally fully happy with the result. They had the right consistency and flavour so I finally got the quantities right. I made them with mince, breadcrumbs, grated cheese, 1 egg, chilli powder, worcestshire sauce. It was the first time I put the grated cheese in the burger mix instead of on top and it worked well.

    I served it with mint peas, roast carrots and red onion marmalade (my favourite thing in the world - I make a weekly batch and always have it in the fridge ready to go :o)

    Well, I buy the filo pastry ready-made...and beyond that, there's no real recipe.


    Normally, a filo sheet (over here) is about 12" x 14". I cut it in 4, giving me four almost-squares somewhere around 3" or 4" on a side.

    Put one down on your work surface. Brush with melted butter. Put the next one down on top, rotated through 45 degrees (giving you an 8-point star. Brush with melted butter. Repeat with the other two sheets.

    Put a small lump of brie or camenbert in the middle, and then pull the pastry up around it. You want to pinch the pastry together a bit below the points, so you end up with a sort of a parcel with the "points" of the start still sticking out. (Its just a matter of "feel" or experience to judge how much cheese that will fit) Here's a really bad ascii drawing :

    Bung it into the oven at about 180 for 20-25 minutes....basically by the time the filo is properly cooked, the cheese should be melted.

    Note: If its too fiddly / too much work to be messing around with quarter sheets of filo, use whole sheets, and you can use an appropriately larger piece of brie. Not as elegant...and certainly not a small starter....but still tasty :)

    Last night we used up some stuff before we head off on holidays. We had goat's cheese salad with bacon, spinach and rocket, tossed in red wine vinegar and cranberry sauce (had no balsamic - tasted good but made the salad look quite pink), patatas bravas with home-made garlic sauce and I tried my hand at home-made Thai corn fritters with chilli sauce. Not bad.

    I had kalbkopf (calf's head) in a really nice italian restaurant here in Bern. It was actually slices of calf's cheek served in a warm vinaigrette with pickles, raw onion rings & boiled spuds. Unbelievably tender & succulent.

    The week before I had braised oxtails with pan-fried macaroni. Looking forward to the bolito misto next week.

    Im just in from work and im hungry so its like food porn in here since the last time I checked!

    Tonight was sweet potato and wild mushroom risotto. Pretty good by all accounts. I just cant muster that much excitment for it. Its rice with a few ingredients to take away from the tedium that is rice and a dollop of wine to make it palatable. Same with polenta. Im always wary of ordering either when Im out. Never really had good experiences ..even in good restaurants.

    Hill Billy, where are you living? Germany? Going on the kalbkopf I say yes, but the vinegatette threw me location wise even though the accs are all trad SWald)
