Depending on wind direction: I personally like to have the wind behind me
    on the home run
Cork Mallow Millstreet Macroom Cork - No serious hill work

Cork midleton tallow lismore the vee clogheen mitchelstown fermoy Cork
Light hill work midleton to tallow, Nice climb on the vee.

Cork Youghal Dungarvan Lismore Fermoy Via Ballyduff or the vee

Cork Coachford (R618) Creans Cross (R619) Banteer (R579) and return vua millstreet macroom some hill work

Cork Glenville (r614) Ballyhooly - Fermoy or Mallow. some hill work

These are reasonable runs. The hill work is not excessive and road surface is reasonable.

There are serious hills for climbs if you you want to test you and your bike, but they are short and steep. Some hills are more suited to mountain bikes than road bike, but can be very testing.

Hope this gives you a start point.

Nowhere near the length of roadmanmad's runs but Cork-Kinsale is a nice shorter (~55km) loop. This route (approx) is hilly on the way out over back roads and easy on the way back (main road.) Road surface is good.
