I just recently bought a 01 fiesta, waiting for the change of ownership book/form to come back. It's due an NCT shortly, just waiting for confirmation of the date. It is possible for me to insure it yet or will I just wait till nct and log book are back, i probably need them for insurance yeah? And of course the tax after…

Yes you should be able to insure it without the log book and NCT (possibly subject to passing the NCT soon).
