Recipe Question - Corrigan Knows Food

Hey hopefully somebody here can help me out with this. I was watching 'Corrigan Knows Food' last week. A dish was prepared using tenderloin pork and fig. I have tried searching the RTE website and Aertel etc but to no avail. I am desperate to find out this recipe. If anybody here can help I'd be very grateful...

Not that I dont appreciate some response, but do please read the OP prior to offering a suggestion. In particular, the part where I say:
