    hi ,I'm a little stuck on what cheese I need for cooking .
    It's the cheese that melts on hot pasta ?

    I think you're looking for Parmesan or Grana Padano. Try to buy a block and keep it in the fridge. M&S do a very nice wedge of Grana Padano, I wouldn't be without one in the house!

    Gruyere and Raclette are both excellent melting cheeses. Mozarella melts really well and goes really stringy, it's usually used on pizzas for it's melting properties. Parmesan is the usual pasta cheese.

    Just about any cheese will melt apart from the haloumi/paneer types.

    Fontina......tastes wonderful and melts quickly.
    Very rich silky texture.

    Fantastic on roasted potato chunks tossed in Rosemary & Garlic too.
