What to sow?

OK, here we are at the end of August. What can one sow at this stage to get some autumn/winter food, and to prepare the soil for next spring. I was thinking of sowing some tares to prepare my old hen run, currently the haunt of nettles but next year about to be rebranded as a lean-to polytunnel.
