Roast Chicken Accompaniments?

    Something doesn't look right in my title :confused: Anyway, I have a whole stuffed chicken at home in the fridge for tonight's dinner. I plan on roasting it but I don't want to do the usual mashed potato, carrots and peas with it. Any original ideas???

    You could maybe do some rice flavoured with chicken stock ?
    Instead of veg, maybe a side salad?

    Fresh sweetcorn, gravy made from the chicken browning. Mashed spuds and roast pumpkin.

    Peel some carrots, & chop a butternut squash into chunks.
    Drizzle liberally in olive oil.
    Sprinkle the carrots with whole cumin seeds.
    Dust the chunks of squash with ground cumin & coriander seed.
    Thrown in a whole head of garlic covered in olive oil for good measure.
    Chuck into the roasting pan for the last 45 mins that the chicken in roasting.

    Edit: And maybe a couple of fresh baby beetroots.

    A combination of the above: a delicious crusty loaf with real butter, a cob of very fresh corn and a crisp salad. Delish.

    Thanks for the replies, I ended up doing some roast veg - a bit of everything and mashed potatoes with lots of cream, still a bit boring.

    Roast the bird and carve - keep the stuffing for sandwiches
    Serve over a white risotto with garlic
    Pan fry a couple of handfuls of mushrooms
    Add a sluice of cream
    Chopped herbs
    Spoon over the top
