Chicken Marsala

    Just wondering if anyone has any tried recipes for Chicken Marsala? Plenty of recipes on the net but wanted to try one someone can vouch for!
    I had this on holiday recently and it was yummy

    A pan fried chicken breast (skin on) cooked in a frying pan with a little butter and some oil - stops the butter from burning.

    Season with salt & pepper. Cook skin side down until brown - then turn over, 4 minutes. Finish in the oven - 15 minutes at most.

    Take the chicken out of the pan and leave to rest. Pour off the excess oil and a glass of marsala - when the alcohol has boiled off add a couple of ounces of cold butter and swirl into the sauce until melted. The sauce should be light and thin, rather than a thick gravy, and there won't be huge amounts of it.

    That's it. Slice the chicken breast, serve with spuds and french beans and pour over the sauce.

    Sounds great Minder, thanks! Just wondering where you get the Marsala wine? I'm not having much luck finding it..
