As for me:

Things that catch my attention -
un-natural hair colour (as in colours that are not naturally possible; pink, blue, green, highlighter red, etc...), no idea why, they just do...

after that it's pretty much all down to personality:
warm heart, affectionate, intelligent enough that we can have many random discussions, just to get to know each other better, and to understand that sometimes I might not talk to her about things because I don't want her to worry, quick to laugh or smile, honest and someone I can trust with who I am and who would trust me, etc....

Other than that all I'd say is that as long as her body doesn't indicate that she's got better than average odds of dying any moment (morbid obesity or size zero) now I don't care.

I'm used to being accused of being ginger, that's why I reacted that way, I'm brunette with a bit of auburn and a bit of blond so I hear a lot of funky things about my hair colour.
