Short hotel break ideas

Boyfriend's birthday is coming up and was thinking about bringing him for a nice dinner in a hotel and then overnighting there. Can anyone recommend a hotel that has a good reataurant or has a deal of this sort on offer? Preferably within relatively short driving distance of Dublin (was thinking maybe Wicklow?).
