Sweet Potato Wedges

    Can I leave the skin on and how long do they take to cook roughly?, I've noticed that they boil very fast compared to spuds.

    I'm trying to eat better these days and have quite grown to like sweet potatoes.

    Potato wedges used to be a big "treat" food so am keen to try out the sweet variety and see if its sinless pleasure!

    I leave the skin on alright. Then again, I leave skins on pretty much no matter what!

    Chop them up into wedges, stick 'em on a baking tray with a little bit of oil, some salt, and bake for about 20 minutes in my experience (maybe 30 if you want them crispy on the outside).

    Thanks Faith, that sounds nummy!, i'll add a little garlic and paprika to the mix as well , happy to know that they work as well as ordinary spuds.
