Cut up some apples and mandarins and take some cooking chocolate and coat them. Also, peanuts and julienned carrots in some olive oil is very tasty. Popcorn done fresh from the microwave is always a hit. Finally, some toast, pesto sauce and halved cherry tomatoes. Simple really

The aul carrots/celery with dips is a good bet
Do a potato tortilla - cut it into small squares
Spicy salsa with a dollop of creme fraiche on a wee toast/cracker
    Cocktail SAUSAGES! :) (from Superquinn)
    Cheese board
Slices of french stick spread with boursin and chorizo on top
Cherry tomato, mozerella and basil kebabs
    Smoked salmon & brown bread

Maybe not the cheapest, but cut up breadrolls into half-slices, put a layer of some tomatoey sauce (before i learned to cook, i would have used stir-ins), and a nice cheese. Grill a batch of these and voila - mini pizzas!

Also, grill some sliced black pudding (not Denny - go to a good butcher) smothered in honey mustard, serve on a slice of brown bread cut to be roughly the same base size, and put a teaspoon of stewed apple on top. Really odd combination, but it is gorgeous.

For pure simplicity, you can't go wrong with some pre-sliced cheese served alongside some good crackers. Easy to prepare a lot of this, so probably best suited to your situation
