Anyone know would a 1GHz PC running linux have a problem filling a 100MB Ethernet connection - or enough to stream 40GB HD movies?

Assuming you mean 100 Mbit ethernet, no problem. You can saturate 100 Mbit ethernet with a 400 MHz Celeron box. My old 200 MHz Pentium box can do ~55 Mbit.
