If you'd be interested in swing/jazz dancing you'd be in luck as there's loads of classes on.. have a scout around Aras na Gael or just pop into the Black Magic Big Band on Mondays in Bar 903 and pick up the flyers that are left there. There's classes Mondays, Tuesdays, Thursdays and Sundays as far as I know, maybe even more...

There are tons around in Galway

Arus Na Gael has flamenco classes - something different and great fun
There is Bellydancing at http://www.galwaybellydance.com/ and at the Galway Dance Centre Terryland as well.

I took classes last year with the Terryland one, and while I didn't really like the classes myself you might be different. Its behind the hotel at the Terryland roundabout, upstairs (I think it was above a paint shop?)

Salsamania have classes in the Claddagh (building beside where the swans are) and at Cuba as well. http://www.salsamania.ie/classes.htm

I think the dancer in residence at the council holds classes as well. This is last years brochure but if you contact them they might have an updated one. http://www.galway.ie/en/Services/ArtsOffice/DanceProgramme/TheFile,6299,en.pdf
