What to do with a lean pork roast?

    Picked up a lovely pork roast yesterday and am looking for something exciting to do with it. Really tasty!! Any ideas?

    For loin of pork I usually make a rub with a little olive oil, lemon rind and some juice, lots of garlic and sage or rosemary. If you massage it well into the meat it will keep it moist and succulent alll the way through.

    If there's rind on the joint, before you put a rub on score the rind with a stanley knife and pour boiling water over it then pat it dry and rub plenty of salt into the rind. This will give perfect crackling.
