Blueberry Muffins

    I've been trying to make blueberry muffins, just like the cuisine de france ones you can buy ... but so far it has been a complete disaster ...

    does anyone know where i can get a the cuisine de france recipe or one very similar to it?

    Try this - makes 12 standard size muffins

    10 oz plain flour
    3 teaspoons baking powder
    1/2 teaspoon salt
    4 - 5 oz fine white sugar (caster)
    1 egg
    8 fl oz milk
    3 fl oz vegetable oil
    5 - 6 oz blueberries

    Preheat the oven to 190c for fan oven, 200 for conventional oven

    Sieve and mix all the dry ingredients except the berries in a bowl
    Mix all the wet ingredients in a second bowl or jug
    Add the wet to the dry and mix
    It is a batter - so should be wet with no dry flour visible
    Add the berries and mix through
    Add in spoonfuls to muffin cases
    Bake for 20 to 25 minutes
    The tops will be slightly browned when done and should be springy to the touch.

    Can be made with frozen berries - increase the oven time by 5 minutes
    Can be made with self raising flour - reduce the baking powder to one teaspoons.

    The recipe is from Susan Reimers Muffin Book - tried and tested with excellent results everytime.

    I use this one - very successful and moist. Makes 12

    400g Plain flour
    200g Caster Sugar
    60g butter
    200ml milk
    2 eggs
    1 tsp baking powder
    1 box blueberries
    zest of 1 lemon

    Sieve flour & baking powder into bowl. Rub in butter. Add caster sugar.
    Add eggs & milk and mix well.
    Add zest of 1 lemon & blueberries.

    Cook at 180 deg C for 20-25 mins.

    I use this recipe:

    190 g all-purpose flour
    150 g white sugar
    3 g salt
    9 g baking powder
    80 ml vegetable oil
    1 egg
    80 ml milk
    145 g fresh blueberries

    Preheat oven to 200 C or 400 F. Mix flour, sugar, salt and baking powder in a bowl. In a separate bowl, combine the oil, egg and milk. Mix in with the dry ingredients and fold in the blueberries. Makes 6 big muffins.

    I'm always getting compliments on these muffins!

    Oil or butter - I have tried both and now always use the oil. I find the result to be more moist and less crumbly - more of an american style muffin. Not that one is any better than t'other - just a preference;)

    I made these yesterday - thanks for recipe!
    I only had 1 egg so used a bit extra milk, but they were so tasty!

    There's a Good Eats show about muffins that's worth a watch, with an accompanying recipe. After having tried many recipes and methods, I found his to be consistent.

    To avoid a tough, compact, dense muffin and to get a light, fluffy muffin, with a proper cap, it really it important not to over-mix the flour. And coating the blueberries with a little flour prevents them from sinking. That recipe calls for cake flour, but plain works just fine.

    I got my blueberries from this delivery service www.homeorganics.ie but have seen then at the markets particularly Farmleigh

    Here is a great recipe for blueberry brunch pancakes http://homeorganics.wordpress.com/?s=blueberries. Blueberries are meant to be a superfood!!

    Lidl normally have them, got them in Dunnes on Saturday - 2 packs (130g) for €5.

    Anyone got a good recipe for low-fat muffins?

    I don't mind what goes in them (apart from raisins/sultanas) but anyone got any healthy method for baking muffins!

    You could try this - found it in a book I have here called 1 mix, 50 muffins.

    Low Fat Muffins

    280g/10oz plain white flour
    1 tbsp baking powder
    half tsp bicarbonate of soda
    115g/4oz caster sugar
    2 medium egg whites
    250ml/9fl oz low fat natural yogurt
    3tbsp sunflower oil
    1 tsp vanilla extract

    Preheat the oven to 200 degrees. Grease muffin tin/line with paper cases.
    Sift together the flour, baking powder and bicarb of soda in a large bowl. Stir in the sugar.
    Lightly beat the egg whites in a large bowl, then beat in the yogurt, oil and vanilla extract. Make a well in the centre of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until just combined - do not over mix.
    Spoon the mixture into the muffin tin, and bake for about 20 minutes.

    Haven't tried this recipe yet - if you do try it let us know what it was like.

    I used this recipe today.
    Halved all the measurements and got 11 fairy cake sized muffins. They are delicious. And so simple. The lemon really adds to them. Yummy scrummy. :D
