Since moving into new house I havent touched the water heater mainly cause I havent a clue1!!! Never had any experience with these have always had water heated through stove in other house. Anybody got one of these that could explain what I do to heat the water by night to have it throughout the house the following day?

Have the 3 channel controller myself so can't give you much info but here's a link to the user manual for your one just in case you don't already have it.

you have a night mode that has a timer and a boost mode (with its own timer).
Depending on how it is wired, typically the night mode is wired to the bath element ( if its a twin element unit as most are) so the night mode heats the bath
(large) element during the night, this is where most of your hot water will come from, if in the evening you feel you are running out of hot water and or the water is getting too cold for you, simply use the boost button, this will heat the sink (smaller and faster) element, you can set the duration of the boost mode too.

If it is confusing you could consider it to be two timers in one box,
One for the sink and one for the bath element,
the bath element heat lots of water slowly (IE over night) and
the sink element heats a smaller amount of water quicker.
