Salmon Steaks

    Hi, have these for dinner tonight but new to cooking fish so not sure what to do with them..

    Anyone any ideas?

    Heat a pan until smoking. Oil the fish and season. Pan fry the seasoned salmon steaks for three or four minutes on each side on a medium heat. Allow to rest in the pan with the heat off. Serve with a sauce gribiche, quick version

    3 hard-boiled eggs, yolks and whites separated
    teaspoon of french mustard
    four large tablespoons of mayonnaise
    1 teaspoon of chopped cornichons
    1 teaspoon of chopped capers
    1 teaspoon of chopped parsley
    1 teaspoon chopped tarragon
    salt and pepper

    Mash the yolks and mix into the mayo. Chop everything else and add. Taste and season with salt & pepper if necessary.

    Boiled salad potatoes and french beans would go nicely.

    You could poach them. I bring some water and a glass of white wine, seasoned with salt and a couple of whole black peppercorns to the boil. Then add in the fish for about 5 minutes, depending on the thickness.

    A quick recipe for a nice citrus sauce, is melt a small bit of butter, add in some fresh cream and the juice of an orange and heat through for a couple of minutes. Pour over your fish and serve with your choice of veg.

    Marinade the salmon in soy sauce, chopped chillies, scallions, ginger & garlic in the fridge for an hour - longer if you can.

    Remove the steaks from the marinade & fry on a high heat in a little vegetable oil for 3-4 minutes per side.* Remove from pan & keep in a warm place. Pour marinade, chillies, etc. into pan & reduce by half.

    Serve salmon on a bed of noodles & pour reduced marinade over the lot.


    * Note: Cooking time above is an estimate & will of course depend on the thickness of the steaks. When you put the salmon on first you will see it cooking from the bottom up. When it is cooked to almost halfway up, then turn the steaks. Cook for a minute less on the other side & then remove to a warm place. The salmon will continue to cook itself for a minute or so.

    Marinate with Cajun spice (the longer the better)
    Bake in Oven for 15 minutes

    Serve with Home made wedges of potatoes, roasted with Rosemary, black pepper and sea salt,

    and a light side salad with a salsa dressing

    Yum
