Best BBQ Marinades/Bastes/Rubs/Glazes

    So as the title suggests, what are your favourite of the above.

    I use a lovely marinade stolen from ainsley harriot. Coriander & Lime (for chicken)

    A big bunch of Coriander finely chopped
    4 cloves of garlic finley chopped
    1Tablespoon of oil
    1 desert spoon of soy sauce
    1 table spoon of fish sauce
    1 or 2 tea spoons of crushed black pepper corns
    some salt
    1 Tea spoon of caster sugar.
    juice of 3 limes.

    It smells manky, but when marinaded then BBQ'd then left over marinade used as baste its amazing.

    I skewer chicken breast pieces for this.

    Paprika, cumin and salt in equal quantities - sprinkle on lamb chops and grill or barbeque - instant Marrakesh.

    Smashed garlic and fennel seeds on pork chops.

    Jerk paste on chicken - I have never tried to make this and I found the Walkerswood brand was too hot, but I found a excellent make at a Chilli Festival in Hampshire - Clara's Pepper Pots - very good if you like jerk, the flavour is fantastic and the heat doesn't require a T-roll in the freezer.

    Chicken with lemongrass - Blend together four lemongrass stalks, four shallots, half a head of garlic, four red chillies, a tsp of sugar, and enough fish sauce to make a wet paste. Marinade the chicken and roast in the oven with the marinade for 35 minutes.

    Pomegranate molasses and salt on lamb - roast or barbeque.

    Blended onion, lemon juice, cumin and salt on lamb - roast or barbeque.

    Harissa on white fish - snapper or bass - roast or barbeque.

    Goats cheese & pesto on chicken breast. You might need some milk or something to loosen the cheese up, but it tastes really really good.

    Marinade for pork baby back ribs:
    2 tbsp orange marmalade (thin cut)
    1 tbsp soy sauce
    2 tsp Tabasco
    1 red chilli finely chopped
    3 scallions roughly chopped

    An "Indian" type marinade (for chicken or lamb):
    2 tbsp of mango chutney
    1 tbsp red wine vinegar
    1 green chilli finely chopped
    2 tsp garam masala
    1 tbsp chopped coriander

    and for the lazy/students amongst us

    those giant bready tesco value sausages, smeared in some random cheap bbq sauce before being fired on the grill is always good with the cheap beer.

    I cheat and use te schwartz cajun seasoning, I marinate chicken in it minimum 2 hours.

    It brings a lovely spicy taste to the chicken skin. Yum.

    Tuna, I mostly do with coriander (leaf, not seed), lime (juice & grated rind), garlic (chopped, not crushed) & chilli (chopped).

    Don't let it sit too long, or the lime juice will cook it so much it'll fall apart on the grill. 10-15 minutes marinading should be more than enough.

    Tuna - cook on a griddle, then deglaze the pan with a mixture of two tablespoons of dark soy sauce, a teaspoon of brown sugar and a tablespoon of rice wine. Mix the sugar, wine and soy in advance until the sugar dissolves. When you pour it over the hot pan, it'll quickly turn into a thick, sticky sauce that is excellent poured over a just-cooked tuna steak. Serve on a bed of buttered egg noodles with a side of steamed greens - I like split french beans. Tasteeeeee.

    Also - tamarind. Buy some paste or pulp and experiment with beef. If I'm testing marinades (and this usually happens before a barbecue) I'll buy a large piece of round steak, cut it into strips across the grain and marinate a few in different things before a quick cook, then serve with some boiled rice and steamed greens.

    Tamarind is sweet, almost citrussy - it's really, really good with beef. Try mixing it with a little soy and some rice wine. Try it with some ginger - grated ginger and tamarind, dilute it down with either soy or lime juice. Mix and match a few bits and pieces out of the following list:

    tamarind
    soy sauce (dark)
    rice wine
    chili sauce
    lime juice
    lemon juice
    grated ginger
    grated garlic
    chopped fresh coriander
    fish sauce

    Mix and match, smear on beef strips, - another trick is wrap the beef strip, in its marinade, in cling film and bash it with something heavy - I use the pestle from my mortar and pestle. Then leave it for an hour or two.

    any other simple marinades ..that one may not need too many ingredients or already have at home

    I boil some ribs in some Cider for about 25 mins (depends on the size of them)

    When I am ready to finish them on the BBQ I make up a sauce of equal parts:

    Sweet Chilli Sauce
    Oyster Sauce
    Heinz tomato Sauce.

    Simple and delicious.


    My other favourite is for chicken strips.

    Cut about 4 chicken breast into long thin strips and marinade them in the following marinade.

    3 Tablespoon Veg oil
    1 Tablespoon Soy Sauce.
    1 1/2 Tablespoon Soft Brown Sugar.
    1 Tablespoon Sharwoods Medium curry Powder.
    1 Teaspoon of Garlic Paste.
    1 Teaspoon of Basil Paste.
    Salt & Freshly Ground Pepper

    Once marinaded, place the chicken strips directly onto the BBQ.
    The secret is DON'T turn them over. Let them cook through from one side only. If they are cut nice and thin then it wont take long and you will end up with a nice darkened crunchy side and a tender soft side on the other. This chicken is as nice cold as hot.

    Pork steak & teriyaki sauce, you get the pork steak and cut it at the bottom and roll it out while cutting -sort of like a swiss roll. This makes one big flat steak so more room for the marinate. Chinese hoi sin sauce too, I get wing yip brand in tesco, it is like what is on BBQ spare ribs in the chinese.

    I'm not being flippant here but when I BBQ meat I like to season it with salt and pepper and brush it with oil.
    That way you taste the meat and the BBQ flavour.

    You can always add a sauce.

    Now I'm not saying that I never put spices on meat but I rarely do for BBQ.

    This is UNBELIEVABLE!! Did some chicken strips last night on the BBQ, best marinade I've ever made, MMMMMMMMmmmmmmm

    Ainsley's BBQ book is a must for anyone, bought mine second hand for 3 quid best investment ever.

    just used this marrinade for a shoulder of lamb but would be fab with a butterflied leg for the bbq:

    8tbsp yoghurt
    3 cloves of crushed garlic
    2.5cm fresh grated ginger
    juice of half a lemon
    2 tsp turmeric
    4 green cardamom pods lightly crushed
    1 tsp ground cumin
    1tsp ground corriander
    1/4 tsp cayenne pepper
    1/2 tsp salt

    yummy
