If you show up at the VRO after moving to the Republic from the UK/Northern Ireland with a car you have owned for more than 6 months, what kind of documentary evidence do they look for to see that you have been resident outside Ireland? Anyone have personal experience of the process?

My wife moved from NI several years ago.
The VRO want proof that daily life existed there for the 6 months - bank statements with normal transaction levels, phone and other utility bills, insurance, tax details, etc.
She had to pay because when she went home she stayed with he folks who paid most of the bills etc. so she didn't have enough to satisfy yer one in the VRO.

    Did she not appeal it?

Would this satisfy them do you think: "social" mail (letters, deliveries etc.), P60's for a few years, payslips, oil deliveries, TV license, electricity cards, car reg document, car insurance, car tax, insurance & tax for another previous car, bin charges, bank statements, internet bill, mobile phone address (not a bill phone tho), a few charity subscription things. Also, sales invoice for purchase of the car.

If you had all of the above could they still turn around and say no?!

She hadn't enough bills in her own name to keep them happy - simple as that!
