Beans in Casserole

    Can anyone tell me please; if I have soaked my beans overnight (pinto & black turtle beans) will they cook in a 3 hour casserole ?

    I've always been afraid of hard beans in my chili so boil them separately but I do like the idea of cooking them along with the meat in the casserole.

    Anyone have experience of this?

    The most toxic of beans are kidney and cannellini beans, but why take the chance with pinto or turtle beans. I would boil them for 10 minutes on a high heat to make sure, then use in casseroles or stews. Slow cookers will not destroy the toxins because the heat doesn't get high enough. As the cooking time for dried beans is much longer than the 10 minutes, it won't affect the result of a long cooked casserole. Three hours should be more than enough. Sounds lovely, what else are you putting in it?

    Chuck beef,onions, Garlic, Some dried, smoked chillies (from Mexico), sun dreid tomatoes carrots, celery, thyme, bayleaf, oregano (all fresh), a little beer, pepper corns served with brown rice and a tomato,onion,mango, lime and fresh corriander salsa and a bottle of big red wine.

    Well, you did ask!:)

    Oh, and I put a tin of black eyed beans in too.
