So I just read this on alt.coffee.....

"coffee beans must be used within 10 days of roasting or they are garbage"

Sounded a bit harsh to me. Interested to hear opinions on this.

Also, what's the ideal time to leave beans after roasting before using them? 24 hours? 48? (I've seen both mentioned on different sites).

That quote from alt.coffee is utter tripe. Yes, the beans will be at their prime in those 10 days, but the fall-off curve is not that sudden. It also depends on how they are stored (obviously).

I used to rest beans for 24 hours, but now I prefer 48 hours. That's for espresso. 24 hours is grand for filter (tbh I've used beans for filter within moments of taking them out of the roaster).

Agree with the above. I let the beans rest for about 24/36hrs personally.

I find the cuban beans I normally roast are best about three days after roasting. I rarely use beans more than a week old,but may have no choice when i get home
    From hols this weekend. :(
