Salad ideas for party

    I'm having the extended family over (about 40 including children) and preparing a buffet lunch.

    I'd like to have some colourful / attractive looking salads. Ideas so far I have are:
    3 bean with some chopped red and green pepper;
    roast veg salad (though this is more of a winter salad I think!);
    Carrot and courgette

    Has anyone got other ideas please?

    2 idea for salads

    1. walnut and apple
    red lettuce, apple, walnut, parmisan

    2. greek salad
    red lettuce, cucumber, (black) olives, tomatoes, feta (greek cheese), onions (optional)

    Feta, tomato, rocket & pine nuts
    Cous cous (roasted veg usually goes well with this)
    Pasta - one with pine nuts, pesto and parmesan, one with peppers, tomatoes and seasame oil
    Green beans with cashew nuts and strips of mild chilli in a sweet sesame dressing
    Avoca salad - broccoli, feta, hazelnuts & tomatoes in a french dressing
    Potato salad

    Roast pepper salad - grill or scorch red & yellow peppers until the skins are black. Pop them in a bag and allow the steam to loosen the skins. Peel, deseed and slice thinly. Scatter around a platter and add thinly sliced anchovy, a handfull of capers, some thinly sliced garlic and plenty of torn basil. Grimd of pepper and lots of good olive oil.

    Big pile of grated carrots with some toasted seasme seeds.

    Mozzerella, avocado and tomato with olive oil and basil.

    Pears, peeled & cut into quarters and cooked on a griddle pan, roasted pasnips or sweet potatoes, feta, olives and rocket. Vinaigrette dressing.

    Taboule

    Ingredients

    * 1 cup couscous
    * ¼ - ½ cucumber
    * 1-2 tomatoes
    * 2-3 spring onions (or 1 med. onion)
    * 1 dsp sunflower oil
    * large handful fresh coriander
    * 1 dsp apple vinegar
    * 1 dsp lemon juice
    * salt & pepper

    Method

    1. Bring 1 cup of water to the boil, then add a large pinch of salt.
    2. Take off the heat, and add uncooked couscous & stir thoroughly.
    3. Allow to cool, stirring occasionally to ensure it doesn't stick together.
    4. Add sunflower oil and stir through.
    5. Finely dice tomatoes, cucumber, (spring) onion and coriander. Mix through the couscous.
    6. Add apple vinegar, lemon juice, salt & pepper to taste. Add more vinegar or lemon juice as taste demands.

    Just scallions, mayo & seasoning for me. Using waxy potatoes.

    That sounds very nice but it's NOT Taboule.
    Taboule is chopped mint and flat leaved parsley with a little finely chopped onion and tomato, a little bulgar wheat, salt and lemon juice.

    Great with lamb or pretty much anything
