There's plenty of sites that'll let you download YT videos- can't remember any off-hand now but just google "how to download youtube videos" and you'll get one.
You just enter the url of the video and
they're usually downloaded in flv format.
Use something like flv player or VLC to play them back.
Or convert the flv files with a converter.

If you're using firefox you can get the downloadhelper extension which allows you to download youtube videos. Theres an add on to it I think, which also converts flvs to avis, if you want to put them on an ipod etc., though you might have to play around with the encoding options, but its fairly straightforward.

There is an option to save the audio only (mp3).

It's sometimes a bit iffy because it's so busy, but it works.

You can download videos from all sites using RealPlayer.

There is a program called Audio Extractor and no surprises there, it extracts the audio from a video file. There are many different audio types you can use, but mp3 is the default setting.

I have used it a few times and find it very easy to use and highly recommended it.

This is the best way to download anything from youtube: http://www.youconvertit.com/convertfiles.aspx

Go to youtube, type in the name of the song or video you want, then
    1. Copy the web link and paste url into the "Convert online Video" section of this site.
    2. Type the email address you want the downloaded file to go to and
    3. Select what format you want the downloaded file to be i.e mp3, wav, avi etc.. Hope this helps

firefox browser has an addon called 'download helper' this downloads the clip also in .flv format ( i think you can change the format to mp3 in the options menu?)
if you cant just use aoa audio extractor to convert it to mp3, wav etc

ok. All a bit techie for me. Can I download music to my computer (media player, i-tunes), without having to go to youtube each time to hear them. If I have them on the 'puter, I can then transfer to mp3 player.
