In a brown or paper bag in the salad compartment of your fridge. Or a cool cupboard.

The garlic releases gas which 'ripens' it. If you put it into plastic, it cannot escape the the garlic starts to grow quicker. The paper will let the gasses out. Similar theory to the banana trick. You want to ripen your avocados (or any other fruit/veg) - pop them in a bag with some bananas.

    In Olive Oil.

Cut the cloves open and store them in Olive Oil.

Take them out when you need them.

As an extra bonus, you will get some nice garlic infused Olive Oil.
