Tiling the surface of a kitchen island...

Im planning on putting an island in our kitchen. It will have a gas hob and enough room for a few barstools, all on one level. I was thinking of tiling the surface. I was wondering should I seal it when its tiled? What should I use for this? Alo what grout should I use? Thanks.
