Building this PC with the intent of mild gaming -nothing TOO new- and general browsing entertainment stuff. Gonna dual boot with Ubuntu and MS server 08. Any suggestions? I know for a fact that I need a new MoBo and GPU.

Ditch the graphics cards. 7900 sli will still be pretty weak and you could easily get a more powerful single card for the same money. A 4850 or 4830 (if they are available) would be much better.
