    Has anyone made this? Most recipes I've seen have a cream cheese mixture inside. Is this essential or can it be made without it?

    I've made with a saffron rice filling between the fillets of salmon - but the filling can be left out entirely. When you bake it, insert a metal skewer into the fish and leave for 30 seconds. If the tip is hot when removed, the fish is cooked.
