    hi i'm icing my sisters wedding cake, she wants it covered in white chocolate any suggestions please

    Make a white chocolate ganache - loadza recipies online. Basically white chocolate with hot cream.

    You have to be careful with white chocolate, as it contains more cocoa butter than dark chocolate, so you have to adjust the chocolate:cream ratios. Here's a recipe:

    White Chocolate Ganache

    Ingredients

    227g white chocolate
    60g unsalted butter
    60ml double cream
    1 tbsp. golden syrup
    1 tbsp. dark rum or malibu

    Method

    1. Chop chocoate into small pieces, place into heatproof bowl with the butter
    2. Bring cream and golden syrup to a boil, pour over chocolate. Rest 1 minute
    3. Stir in concentric circles starting from the centre of the bowl, working outwards, for about 2 miuntes or until everything is smooth
    4. Once smooth, add the rum
    5. Let cool before using. Stores in the fright for 2 weeks

    White chocolate and coconut, and acidic (tropical) fruits pair well
