Using up xmas meat!

Anybody got any handy recipes for using up roast chicken, ham besides fried rice? We stopped having turkey on xmas day a few years ago as nobody really liked it, it was more of a tradition than anything.

tradition is still going... but roast chicken and ham sounds gorgeous in a nice sandwich
(another tradition of getting up stephens morning and having *that* glorious sandwich of lefts overs )

Ham freezes really well - in thin slices for sandwiches, and in thick slices like gammon steaks to be fried at later date for dinners.

To use our leftover turkey and ham this year I did a turkey and ham tagliatelle carbonara - twas delish!
