Vegatarian chilli?

    Does anyone have a good recipe for a veg chilli? I used to have a fab recipe for one but lost it!

    got this one from a friend and i find it excellent.

    Ingredients:
    half an onion, chopped
    Bulgar wheat
    2 cans chopped tomatoes
    half litre veggie stock
    2 cans chickpeas
    2 cans kidney beans
    large can sweetcorn
    2 garlic cloves, chopped small
    2 tablespoons tomato puree
    3 teaspoons cayenne pepper
    1 teaspoon cumin powder
    2 teaspoons chilli powder
    half teaspoon cinnamon powder
    1 chilli, chopped

    Put a half cup of bulgar wheat in a bowl, and add one cup of boiling water. Leave to sit for 10 mins.
    Fry the onion and chilli until soft, then add the garlic and spices.
    Fry for a few minutes.
    Add the two cans of chopped tomatoes and the half litre of vegetable stock. Add the bulgar.
    Bring to the boil, then simmer for 30 minutes.
    Drain the chickpeas, kidney beans and sweetcorn and add. simmer for 15 more minutes.
    Add the tomato puree, stir in, and you're done.

    Quorn Mince
    mushrooms
    pepper
    Olive oil
    red chilli pepers
    kidney beans
    4 fresh beef tomatos (pureed)
    1/2 veg stock
    worchester sause
    tomato puree
    Sugar

    Fry of the onions and garlic,

    add mushrooms

    add mince

    stir

    add everything else

    leave to for abotu 1.5 hours

    Today was my second time doing it. It works out very cheap once you have the spices. A big pot of it just cost €8 or so, great for our student house! Here's my version from today (served with sour cream);

    I messed around with the selection of beans a bit on this my second attempt. Here's what I ended up with;
    1 Can Chickpeas
    1 1/2 Cans Kidney Beans (second was a half-can, no wastage!)
    1 Can Sweetcorn
    1 Can Bachelors "Mixed Beans" - contains Dutch Brown Bean, Chickpeas & Haricot Beans
    1 Can Baked Beans

    Also added a bit (~ 150ml) more veg stock to make up for the extra beans.

    These were all emptied into a colander and the sauces washed off them.
    Oh and I now realise that "haricot beans" are what're in baked beans! Look forward to trying more different beans next time.

    FELLOW STUDENTS: If you want to make this really cheaply, most of those cans are available in Tesco Value brand for very little. Consider the spices and initial investment. ;)

    I'm also thinking to do a non-vegatarian version, you could fry up little bits of sausage and add! (like they have in the chilli in the Galway market...)
