Wholegrain mustard and parmesan bake

    Hi, does anyone have the receipe from the Avoca cookbook - wholegrain mustard and parmesan bake?

    8 chicken breasts, skinned and diced
    110g/4oz parmesan, freshly grated
    2 tablespoons wholegrain mustard
    450ml/three quarters of a pint of double cream
    300ml/half a pint of chicken stock
    parmesan shavings to garnish

    Place chicken in an ovenproof dish,add cheese and mustard and mix well.
    Add cream and stock, season with black pepper and bake, uncovered, in an oven preheated to 180C/gas mark 4, for 30 minutes.
    Remove from oven, pour off sauce from the chicken and whisk until smooth. If you wish you can whisk in a nugget of butter and flour toogether over the heat to thicken. Check seasoning and pour the sauce back over the chicken.
    Garnish with parmesaan shavings and serve.

    Speaking of Avoca recipes,

    Anyone have the one for their yummy scrummy Chick Pea Roll??? Would be nice for tonights din dins.
