Porter cake recipe

    Does anyone have a good recipe for a porter cake.
    Promised a friend I would make him one.

    Ingredients
    450g/1lb Cream Flour
    3 eggs
    255g/8oz Butter
    225g/8oz sugar
    125g/4oz finely chopped peel
    1/2(half) teaspoon each mixed spice and cinnamon
    50g/2oz Ground Almonds
    300mls/1/2pint Porter
    575g/1(1/2) lb mixed fruit
    1/2(half) teaspoon Bread Soda

    Method

    Cream Butter and sugar add flour (sieved) with the spices and bread soda alternately with the well beaten eggs to the creamed mixture.
    When all the eggs are added, start adding the porter, fruit and ground almonds. Mix well.
    Turn into a greased and line 23cm/9in round cake tin and bake in a preheated oven at 150c, 300f, gas2 for 2hrs approx.
    Check at intervals after 1 +half hours.

    Cool slightly in tin, turn out to cool on a wire tray.
    Advises to store for 1 week before eating!

    this one was on ireland am yesterday morning.

    Ingredients

    450g/1lb Odlums Cream Plain Flour

    Pinch of Salt

    1 level teaspoon Baking Powder

    1 level teaspoon Mixed Spice

    225g/8oz Sugar

    225g/8oz Butter

    450g/1lb Sultanas

    125g/4oz Candied Peel

    300ml/½ pint Guinness (Porter)

    2 Eggs (beaten)





    Method

    1. Preheat oven 180°C/350°F/Gas 4.

    2. Line a 20cm/8" round cake tin with greaseproof paper.

    3. Sieve the flour, salt, baking powder and mixed spice into a bowl and add the sugar.

    4. Rub in the butter and add the fruit and mix.

    5. Add the porter to the beaten eggs and add to fruit mixture.

    6. Mix well.

    7. Transfer to the prepared tin and bake for approximately 2 hours.

    8. Place on a low shelf position in the oven.



    Note:

    Check cake after an hour and if it is browning too quickly, cover with a double layer of greaseproof paper until baked.
