    +1 on the quality thing.

    Cheap Mozzarella is rubbery and tasteless - I thought I didn't like it until I tried some good buffalo Mozzarella. It's soft and creamy with a lovely mild flavour. A shame to be melting it as it goes away to almost nothing.

    I'm just amazed and disappointed that so many people were listing cheeses without a single mention of Irish cheese - on an Irish food forum!
